It’s week 8 of the Packed Lunch Challenge.
It was a lazy week for me as far as packed lunches go. I was off for Presidents Day and then I was off because of ice in Arkansas. If you follow me on Instagram, you saw a few photos of the road conditions here, but for those of you who don’t it looked something like this:
That my friends is a solid sheet of ice on my street! My husband works in healthcare and has to be there no matter what, so guess who gets to drive him? That’s right, this girl!
We didn’t get back into work until Wednesday and the roads were still pretty bad then! Luckily, it mostly all melted off while I was at work that day, because I also had a dentist appointment that afternoon. Which leads me to the reasoning behind what I ate this week. SOFT FOODS. It’s Sunday, and my teeth are STILL SORE (only a little, but ow).
Pizza and Stuffing Wednesday. Why stuffing you ask? Because it was supposed to go with my pork chop and black bean and corn salsa, but somehow it got mixed up and slipped in with the pizza.
Pork Chop, Black beans, and Corn. I made this on Tuesday night so my husband wouldn’t have to cook when he came home from work (for a change). Have you seen the new casserole style Crock Pot? I absolutely LOVE this thing! I begged for it for Christmas and my sister-in-law was awesome and got it for me! First, if you have a small family like we do, just two of us, it really helps make smaller portions. Second, it cooked those pork chops in less than 4 hours until they were falling off of the bone. I dumped the corn and beans in with them, added a little water, a little pepper, and some garlic, and they were delicious! (As a sidebar, can I tell you how sick I am of seeing recipes on Pinterest for cooking meat in a crock pot that involve a can of soda? Soda is completely unnecessary in a crock pot. All you’re doing is adding SUGAR to your meat. Knock it off. If you want tender meat, COOK IT LONGER. If you want more flavor, use salt free spices and avoid adding sugar!!!)
Friday was a day to try something new. I’ve seen a recipe going around Pinterest and pinned it after I saw a variation of it on My Fitness Pal as well. It’s making an egg salad sandwich with avocado instead of mayo. First, I am 100% through and through a Miracle Whip kinda gal. For some reason when I “remembered” the recipe it had Miracle Whip in it, so I put it in my egg salad. Second, adding Miracle Whip did not change the overall health value too much, so I didn’t cry about it. Third, I wish I had used the MUSTARD in the recipe, because it was a pretty boring egg salad. I added a bit of dill to it, and a few other spices (no salt), and while it tasted FINE, it was a bit boring to me. I think I will keep this recipe around, and play with some spices to see if I can get it to taste a bit better. I want to be able to CRAVE healthier foods instead of just being ok with them.
I also had a cup of fat-free Greek Yogurt with the egg salad. Ummm, plain Green yogurt. It’s a little…bitter. I’m not going to lie, I had to add a little sugar to it to get it down. However, I bought it for a different recipe that I am going to include next week, so get ready for that! It’s simple and should help everyone add a little more veggies to their diet. Especially me!

I never thought that just eating a packed lunch every day could make this big of a change on the scale. I know I haven’t lost a ton of weight so far, but this week proves what you eat does make a change. How do I know? I ate really unhealthy food for dinner most of the week, yet I still lost weight. I also discovered that the really unhealthy food…tastes like crap. Seriously, restaurant food overall is just getting to be GROSS to me.

Weight Loss: 2.6 lbs
Total Weight Loss: 12.6
Exercise: Tried to increase my walking and managed to do it most days. Started practicing my first form for Wing Chun (Kung fu).
Body Changes I’ve Noticed: I feel lighter. My waist feels like it’s trimming in a bit. My back fat seems to be trimming in some.
Goal for the week: Practice my form every day. Dig out my Kinect fitness game and work on my favorites (boxing and balance)
